Fruits and Veggies for the Single Gal

If you are a single white female, you know how difficult it is to eat healthy, save your money and whip up something after a long day of work. Those that say it’s do-able are completely lying. However after lots of practice (aka living by myself for a few years), I have managed to learn a thing or two. Hope you find these tips and tricks quite helpful!

A. Split It Up: When purchasing multiples of the same fruits or veggies, mix it up between ripe and not so ripe. This way you have produce to eat immediately and later on in the week. If you purchase everything at the same ripeness level, you either have to wait a few days for your items to peek or your remaining fruits will be spoiled by the time you get to the last of them. No one likes a mushy banana.

B. Berry Clean Berries: Don’t you hate when you purchase the most succulent looking blackberries to find the next day they are covered in mold? My mom taught me this little vinegar trick that keeps your berries lasting for days. Thanks Cindy-loo!

C. Cutie Patootie: Clementines stay forever and are the perfect grab-and-go snack. Cuties in particular are so refreshing and have no seeds.

D. Squash It: Spaghetti Squash is another one of those veggies that last and last and last. They are also just as good in the winter as in the summer. I find this an ideal pasta replacement (a third of the calories to be precise) and so simple to prepare. This is my favorite video tutorial and still refer to it often. Top with a bit of olive oil, salt, pepper, Parmesan cheese and dinner is served. Healthy and delicious.

E. It’s Alive: As a salad lover, Living Lettuce is a straight up miracle in my household. Bags of arugula and spinach go soggy quickly and I can never finish it in time. This lettuce comes in it’s own little habitat, roots and all. And since it is literally alive, it keeps for weeks. I promise there is a lot more in there than it looks. Great for lettuce wraps too!
